Whenever I crave something sweet and don’t have the patience to turn on the oven, I love making no bake chocolate cookies. They take minutes to make and need all but 4 ingredients to make!
Now, these aren’t like your traditional no bake cookies. They are made with no butter and no oil, but you’d never tell. They are healthy and use wholesome ingredients, and are also refined sugar free. The texture is thick, soft, and extra chewy. They are pleasantly sweet and with a lovely chocolate and peanut butter flavor, without being overpowering.
These cookies are perfect to serve your friends and trick them into having something indulgent, but they are actually healthy!
How do you make no bake chocolate oatmeal cookies
The Ingredients
- Rolled oats– Also known as old fashioned oats. This recipe can easily be made gluten free by using certified gluten free rolled oats.
- Cocoa powder– Dutch processed and 100% unsweetened cocoa powder.
- Peanut butter– Smooth and drippy peanut butter.
- Maple syrup– Gives the cookies some sweetness and keeps them soft. Agave nectar or honey can both be used.
The Instructions
Start by adding the oats and cocoa powder into a large mixing bowl. Next, add the peanut butter and maple syrup into a microwave safe bowl and microwave it until the peanut butter has melted. Whisk it very well, until combined. Add the mixture into the mixing bowl and mix until a thick batter remains.
Now, using your hands, form 12 balls using the dough. Place each ball of dough onto a lined plate or tray and press into a cookie shape. Using a fork, cross each side of the cookie. Refrigerate the cookies for at least an hour, to firm up.
Can I make no bake chocolate oatmeal cookies without peanut butter?
If you have a peanut allergy or want to use something else, you can easily make these cookies without peanut butter. Simply use smooth almond butter, cashew butter, tahini, or sunflower seed butter, and they will work out just as well.
Tips to make the best healthy no bake chocolate oatmeal cookies
- If you find your batter to be a little thick, add some extra maple syrup or even a tablespoon or two of water.
- Do not use quick cooking oats or steel cut oats. The former will yield brittle and soft cookies and the latter will be too dense and inedible.
- Feel free to fold through chocolate chips, dried fruit, or even chopped nuts for some added textures.
Storing and freezing no bake cookies
- To store: Cookies should always be stored in the refrigerator, covered, so they remain thick and firm. The cookies will keep well for at least 2 weeks.
- To freeze: Place cookies in a ziplock bag and store them in the freezer for up to 6 months.
