No eggs and no dairy are needed, but you’d never tell. The texture is thick, chewy, and slightly soft in the middle. They are naturally sweetened and full of chocolate flavor, you won’t be able to stop at one.
What I love about this recipe is how they are secretly healthy! They have no refined sugar, no butter, and no oil, but taste so decadent.
How do you make vegan chocolate peanut butter cookies?
The Ingredients
- Peanut butter– Smooth and creamy peanut butter, with no added sugar or salt.
- Maple syrup– Gives the cookies some sweetness, but holds the dough together. You can also use agave nectar or honey, if you aren’t strictly vegan.
- Oat flour– Rolled or quick oats, ground into a flour-like consistency. Avoid buying expensive store bought oat flour and make your own.
- Cocoa powder– 100% unsweetened cocoa powder with no added sugar.
The Instructions
Start by adding all your ingredients into a large mixing bowl and mix until a thick batter remains. Next, form 12 balls of dough and place them on a lined sheet. Using a fork, cross each cookie twice to form an imprint. Bake your cookies for 10-12 minutes, before removing them from the oven. Let the cookies cool on the pan completely.
