It’s no secret that I have an insatiable sweet tooth. Every night after dinner, I go on the search for something sweet to end my night with. Most of the time, I usually have some cookies or brownies but on the odd occasion where I don’t have something baked, I turn to fudge.
Fudge is traditionally made with cream and butter which are unfortunately not vegan. I mean, I could use plant based cream and vegan butter, but I wanted something easier. Instead, I whipped up my magic 2 ingredient peanut butter fudge.
This peanut butter fudge needs just 2 ingredients to make and takes seconds to prepare. All you need is peanut butter and chocolate chips and voila- you are done. No dairy and no butter are needed, but you’d never tell. The texture of the fudge is extra rich, smooth, and incredibly creamy. It’s sweet and with a subtle peanut flavor, without being overpowering.
I had some friends over for coffee and served them this fudge and NO ONE believed me when I told them it had no dairy in it- They couldn’t believe how creamy it is!
How do you make two ingredient peanut butter fudge?
The Ingredients
- Peanut butter– Smooth and drippy peanut butter, with no added sugar or salt.
- Vegan chocolate chips– Either vegan chocolate chips or a dairy free chocolate bar.
The Instructions
Start by adding your peanut butter and chocolate chips to a microwave safe bowl or stovetop. Microwave or heat up over the stove until the chocolate chips have melted and the peanut butter has become more liquid. Whisk it together, until completely smooth.
Now, transfer the mixture into a lined square pan. Place the pan in the refrigerator for at least an hour, for it to firm up.
Can I use another nut or seed butter?
If you have a peanut allergy or aren’t a fan of peanut butter, you can replace it with either almond butter, cashew butter, or tahini. Like the peanut butter, you want it to be smooth and creamy.
Tips to make the best vegan peanut butter fudge
- If you want to enjoy the fudge sooner, you can place it in the freezer to firm up. It should halve the setting time.
- Line your pan before adding the fudge mixture into it for easy removal and slicing.
- Feel free to fold through 1/2 cup of chopped nuts for some added texture.
Storing and freezing peanut butter fudge
- To store: As the fudge is quite fragile, it should always be stored in the refrigerator, covered. It will keep well for up to 4 weeks.
- To freeze: Place the fudge in a ziplock bag and store it in the freezer for up to 6 months. You can enjoy it straight from the freezer by letting it thaw for several minutes prior.
