Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 large carrot chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 cup rice uncooked
  • 2 cups vegetable broth
  • 1/2 cup tomato sauce passata

Instructions
 

  • Heat oil in a non-stick pan. Once hot, add the onion, carrot, garlic, salt, pepper, smoked paprika, and cumin, for 1-2 minutes.
  • Add the rice and cook for 3 minutes, before adding the stock and passata. Bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, until the rice is tender.
  • Serve immediately.
