These vegan granola bars are a delicious and homemade snack needing just 3 ingredients! No refined sugar, butter, or dairy needed, and easily customizable!
Line an 8 x 8-inch pan with parchment paper and set aside.
In a large bowl, add your oats. In a microwave safe bowl, combine your peanut butter with maple syrup and microwave until the peanut butter has melted.
Combine the wet and dry ingredients until combined. Transfer the granola bar mixture into the lined pan and press down into it. Top with chocolate chips, if desired.
Refrigerate the bars for at least an hour, before slicing into 12 bars.

TO STORE: Vegan granola bars should be stored in the refrigerator, covered, for up to 4 weeks.TO FREEZE: Place the leftover granola bars in a ziplock bag and store them in the freezer for up to 6 months.
