2 Ingredient Banana Cookies
When it comes to simple vegan cookies, my favorite recipes to make are oatmeal cookies, peanut butter cookies, and these 2 ingredient banana cookies. We’ve got all of these plus many more on our vegan snacks page here.
Everyone needs a simple and healthy cookie recipe on hand. We’ve both been trying to stick to a healthier diet, especially as we have some pretty big fitness goals. Instead of cutting desserts and treats out of our diets, we’ve found ways to combat this with healthier swaps.
We’ve been noshing on these banana oatmeal cookies to keep our sweet tooth satisfied, without compromising our goals. Now, these cookies aren’t your traditional sweet and buttery cookies that make your house smell like a bakery. Instead, they are healthy, wholesome, and need just 2 ingredients.
No butter, no eggs, and no sugar are needed. Instead, you’ll need just bananas and oats mixed together and made into cookies. I do recommend you add the chocolate chips, just to give it a little bit more of a satisfying flavor. The texture is thick, soft, and ever so slightly chewy. They are pleasantly sweet, but please do add more sweetness if you need to!
We’ve started making these as part of our weekly meal prep, but not to replace actual cookies…we’ll be sticking to the oatmeal chocolate chip ones for that!
How do you make banana oatmeal cookies?
The Ingredients
- Bananas-Β Try to use overripe and browned bananas, as they will yield a sweeter cookie.
- Oatmeal– Quick cooking oats or rolled oats can be used. The latter will give a chewier texture.
- Chocolate chips– Optional, but highly recommended for added sweetness and a touch of chocolate!
The Instructions
Start by adding your bananas into a bowl and mash very well. Next, add the oats and chocolate chips, if using them. Using a cookie scoop or large spoon, scoop out scant 1/4 cup portions of the dough onto a lined sheet.
Now, bake the cookies for 10-12 minutes, or until the edges begin to go golden brown. Remove them from the oven and let them cool on the sheet completely.
Tips to make the best banana oat cookies
- These cookies are not overly sweet and rely on the bananas for sweetness. If you prefer a sweeter cookie, add 1/4 cup of white or brown sugar to it.
- Do not overbake the cookies, or they will become rubbery. When they begin to look done, remove them from the oven, as they continue to cook as they are cooling down.
- Feel free to add your favorite nuts and seeds for added texture. I love adding some whole almonds or coating half of them in melted chocolate.
Storing and freezing 2 ingredient banana oatmeal cookies
- To store: Leftover cookies should be stored in the refrigerator, covered, for up to 1 week.
- To freeze: Place cookies in a ziplock bag and store them in the freezer for up to 6 months.
