Ingredients
  

  • 1 large eggplant sliced into 1-inch coins
  • 1/2 tbsp olive oil
  • 1 tsp garlic salt
  • 1/2 tsp cayenne pepper optional

Instructions
 

  • Add your eggplant into a mixing bowl. Add the olive oil, garlic salt, and cayenne pepper, and mix until combined.
  • Transfer into an air fryer basket and cook at 200C/400F for 10 minutes, flipping halfway through.
  • Transfer the air fried eggplant onto a plate and serve immediately.

Notes

TO STORE: Leftover eggplant should be stored in the refrigerator, covered. It will keep well for up to 5 days.
TO FREEZE: Place slices of the air fried eggplant in a ziplock bag and store it in the freezer for up to 2 months.
REHEATING: Either microwave the eggplant for 20-30 seconds or reheat it in the air fryer at 200C/400F for two minutes.
