2 Ingredient Banana Cookies
These banana oatmeal cookies are made with just 2 ingredients and take 10 minutes to make! No flour and no eggs needed, they are a healthy and wholesome snack that is easily customizable!
- 2 large bananas
- 1 3/4 cups rolled oats
- 1 cup chocolate chips optional
Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, add your bananas and mash very well. Add the oats and chocolate chips, if using them, until combined.
Using a cookie scoop or a large spoon, scoop out scant 1/4 cup portions of dough and place them on the lined sheet. Bake for 10-12 minutes, or until firm and slightly golden around the sides.
Remove from the oven and let cool completely.
TO STORE: Leftover cookies should be stored in the refrigerator, covered, for up to 1 week.
TO FREEZE: Place cookies in a ziplock bag and store them in the freezer for up to 6 months.
